We haven't had a washed Ethiopian on the menu for ages. Since we love buying from the same people as much as possible, it made sense to grab a couple of bags of Ture Waji's first ever washed coffee. Ture is a master at processing coffee cherries, and this coffee shows how versatile and knowledgeable he is.
This coffee is a a neat one that represent the best of what the Guji zone has to offer.

We have been buying Ethiopian natural from Sookoo Coffee (Ture's export company) since our first year of operation, and the Shoondhisa has been a staple ever since.
Hopefully, this one will become one as well!

This is the King of Guji's first ever washed coffee, and we are so glad we snatched a couple of bags.

This coffee is a clean and sweet iteration of the Guji zone in Ethiopia.
This coffee is peachy and light, almost refreshing! (It makes a delicious flash brew!). It's just such a juicy coffee that you can chug all day.

The orange zest note ads a lot of depth and as well as a nice and complex bittersweet/floral vibe.

The sugar is evident, and it reminded us of demerara sugar.

This coffee doesn't reinvent the washed Ethiopian coffee wheel, but it's a beautiful and eloquent expression of this amazing coffee region.

High demand and lower supply explain those increases.

Ture is dedicated to quality, and is sorting and processing protocols are immaculate compare to most coffee exporters in Ethiopia. He deserves the nickname ‘’King of Guji’!

But sorting coffee the way he does, especially in a year were so much cherries were defective means increased cost for the highest quality.
Also, this is his first washed coffee ever and the cost or processing and attention to details to make this lot exceptional makes it more expensive that our other Ethiopian coffee, the Shoondhisa.

What is also interesting is that farmers hover from exporter to exporter to try and fetch the highest price. Ture won’t shy away from paying extra for higher quality, and his processing knowledge allows him to turn an average lots into something super tasty. He is a master at making sure we can taste the very best of what Ethiopia has to offer.
